Vitamins are fat-soluble or water-soluble organic chemicals necessary in small amounts for good health. Humans require 13 different types of vitamins for normal function and must obtain them from plant and animal foods in their diet. Vitamins A, C and E are antioxidants. B vitamins are important in metabolic activity and in making red blood cells.

Vitamins have diverse biochemical functions, including function as hormones (e.g. vitamin D), antioxidants (e.g. vitamin E), and mediators of cell signaling and regulators of cell and tissue growth and differentiation (e.g. vitamin A) [4]. The largest number of vitamins (e.g. B complex vitamins) function as precursors for enzyme cofactor bio-molecules (coenzymes), that help act as catalysts and substrates in metabolism.

Vitamins C and E have been described under antioxidants. Vitamin A is another anti-oxidant vitamin, but since it can be toxic at high doses, it is preferable to take its precursor, beta-carotene (pro-vitamin A), which is water-soluble, and much safer. It is especially beneficial against breast and lung cancer. Other than having potent antioxidant power that fights cancer, all of them have other health benefits.

-Vitamins have been increasingly used to prevent and treat a variety of skin disorders. A new study in the October issue of the Journal of the American Academy of Dermatology suggests that vitamins A, C and E are increasingly important because of their antioxidant capabilities.

Boosting insulin with vitamins C and E may improve the drug's effectiveness for treating diabetes. A UC Irvine College of Medicine study has found that the popular antioxidant supplements not only enhance insulin's ability to reduce blood sugar, but ... lower the risks of organ damage that can occur despite insulin treatments. The study appears in the January issue of Kidney International.

Keep in mind that even though you may be taking vitamins that contain antioxidants, youll still need to remain on a healthy diet. Youll need food that contains the minerals and vitamins you need as well, although the supplement vitamins will give you more. You can ... use vitamins and supplements that contain antioxidants if you arent able to eat the right foods that contain these precious nutrients.
