Vietnam's national dish is phở, a broth soup with rice noodles ( a form of rice linguini or fettuccini) garnished with fresh greens (usually including basil) and bean sprouts. Phở bò, the classic form of phở, is made with beef broth that is often simmered for many hours and may include one or more kinds of beef (skirt, flank, tripe, etc.). Phở gà is the same idea, but with chicken broth and chicken meat. Phở is available at any time of the day, but is most often eaten for breakfast, for lunch as well if you like. Famous phở restaurants can be found in both Hanoi and HCMC.

Women in Vietnam: "The military, which prided itself on the records it kept in Vietnam - counting the enemy number of weapons captured, for example - cannot to this day say with certainty how many women served. The army that sent them never bothered to count them." This quote from Laura Palmer's book, Shrapnel in the Heart, appears on the home page of Marilyn Knapp's website, Women in Vietnam. Her website attempts to redress the balance by providing a comprehensive account of the 7,500 women who served in the military in Vietnam. Material is collected under a variety of headings including: Many Women Served, Red Cross, Military Nurses, In Memoriam, Get Back in Touch, Bibliographies, Videos, Books, etc.
Map of Vietnam Vietnam's capital lies on the banks of the Red River, some 100 kilometres from its mouth. Human settlements here date back as far as the 3rd century BC. Previously known as Thang Long, it was renamed Hanoi in 1831.
International driving licenses are not accepted in Vietnam. Therefore, there are no car rental companies such as Hertz and Avis etc. However, it is quite easy to hire a car and driver for excursions and day trips. (around US$40-50 for an 8 hour day) Hotels and tourist cafes can usually take care of this. You will find that few drivers will speak any English. Therefore, make sure you tell the hotel/cafe exactly where you want to go.
