Rum: Sugar
built 283 days ago
Rum is one of the most widely distilled spirits in the world, and is produced wherever you find sugar cane. The rum drunk in Europe is produced mostly in the West Indies and Guyana, but a great deal of rum is ... made in South America, South Africa and Australia (think Bundaberg). It can be made from the fermented juice of the sugar cane or from fermented molasses and the flavour of rums varies enormously from the neutral whites of Puerto Rico and Cuba (Bacardi), to the full-bodied rums of Jamaica. It's said that over a million bacardi and cokes are ordered in the UK every single day!

Rum is a distillate made from the extracts of sugar cane. It comes in an enormous variety of characters and types. Further blending can create endless variations within the product. There is no uniform measure to classify the different Rum-types, the only thing they have in common is their basis, the sugar cane. Scheer handles the full range and has developed great expertise in blending the various types according to customer needs.

Most Rum is made from molasses. Molasses is over 50% sugar, but it ... contains significant amounts of minerals and other trace elements, which can contribute to the final flavor. Rums made from cane juice, primarily on Haiti and Martinique, have a naturally smooth palate.

Rum is distilled from the fermented products of sugar cane, usually molasses. As is the case with all distilled spirits, rum is water white when first distilled. Amber and dark coloured rums obtain their colour from the extractives from the oak barrel during ageing and from caramel, a natural colouring agent which is sometimes used.

Rum is distilled in the manner described in the introductory chapter of this book. The choice of stills does... have a profound effect on the final character of Rum. All Rums come out of the still as clear, colorless spirits. Barrel aging and the use of added caramel determine their final color. Since caramel is burnt sugar, it can be truthfully said that only natural coloring agents are used.
