Season the quails with salt and pepper (if the quails have undergone koshering, do not salt) and into the cavity of each bird place one of the apple quarters. Tie with cooking thread.

Soon all the quails had taken sides in this quarrel. When the fowler came that day he flung his net over them, and this time instead of flying off with it, one side said, "Now, you lift the net," and the other side said, "Lift it yourself."

The quails are stuffed with a fresh fig, barded with bacon and wrapped in wine leaves. They then cook for 20 minutes on a grill. A really spectacular dish and very easy too. See for yourself.
