Poultry were the last major group of food animals to be domesticated. Humans likely began by raiding the nests of wild birds to steal their eggs, just as nonhuman predators do. Eventually the birds themselves were caught and kept in confinement, or, when thoroughly domesticated, allowed to range around the farmstead or village to find their own food.

Poultry is the category of domesticated birds kept for meat, eggs, and feathers. These most typically are members of the superorder Galloanserae (fowl), especially the order Galliformes (which includes chickens and turkeys) and the family Anatidae (in order Anseriformes), commonly known as "waterfowl" (e.g. domestic ducks and domestic geese). The Poultry Science Department offers a specialized Master of Science degree for graduates majoring in Poultry Science. Additional offerings include Master of Science or Doctor of Philosophy degrees to students majoring in one of the interdisciplinary curriculums offered by the Graduate School. These curriculums include Food Science and Technology, Animal Physiology, Animal Nutrition and Genetics. Poultry has long figured in human symbolism and legend. Geese supposedly saved ancient Rome from a surprise attack in the fourth century B.C.E. by cackling loudly when the invaders tried to sneak up on the Capitol. Pigeons were offered as sacrifices by the Hebrews of the Bible. The sixteenth-century Flemish artist Pieter Bruegel the Elder—a great fan of fantastic-looking animals—used the turkey as a symbol of envy in his series of paintings on the seven deadly sins. But the domestic fowl most often used as a symbol is the ordinary chicken.

Poultry microchip on watch for bird flu -- A high-tech sentry has been developed for the growing fight against bird flu in the form of a microchip that monitors the body temperature of poultry.
