Mugen purchases whole yellowtail to serve as sashimi (slices of raw fish). The delicacy of fish collar is ... offered as one of their menu items after being salted then grilled. The collar is the meaty portion around the gills, and it is customary in Japan to serve them salted then grilled. The collars of yellowtail or tuna are very tender and delicious. When you first try this dish, you may have some difficulty in getting the fish meat off the bones, but it is totally worth the effort. Their carefully grilled yellowtail collar goes really well with steamed rice.
Working with Honda, Mugen has gradually expanded its sporting involvement to all levels of the sport. In 1986, Formula 3000 was introduced into Japan and Mugen joined forces with Honda to build an F3000 engine. It was introduced in the 1987 season and leased to 14 teams. The following year, Mugen won four of the top five places in the Japanese F3000 championship. In 1989, Mugen entered European F3000 with the MF308 engine and won the championship with Jean Alesi, driving an Eddie Jordan Racing Reynard. The same year the company produced its own prototype 3.5  V8 Formula 1 engine, codenames MF350.

Mugen’s powerful stoves are very unusual for this type of Japanese restaurant. These strong burners are essential for sealing in the flavors of their fresh ingredients. This is one of the key factors that makes Mugen’s yakisoba (pan-fried noodles) such a popular menu item. Abundant vegetables such as carrots, cabbage, broccoli, bean sprouts, onions along with the yakisoba noodles themselves are quickly fried on top of these stoves. Their homemade sweet and tangy yakisoba sauce made from various fruits and vegetables complements the natural sweetness of the vegetables. The amount of tasty vegetables makes this yakisoba a very healthy dish.
In 1998, Mugen built four NSX models, two for the Mugen/Dome partnership, one for Team Kunimitsu and one for Nakajima Racing.
