Milk is an opaque white liquid produced by the mammary glands of female mammals (including monotremes). Mammary glands are highly specialized sweat glands. The female ability to produce milk is one of the defining characteristics of mammals. It provides the primary source of nutrition for newborns before they are able to digest other types of food. The early lactation milk is known as colostrum, and carries the mother's antibodies to the baby. It can reduce the risk of many diseases in the baby.

Milk salts are mainly chlorides, phosphates and citrates of sodium, calcium and magnesium. Although salts comprise less than 1 % of the milk they influence its rate of coagulation and other functional properties. Some salts are present in true solution. The physical state of other salts is not fully understood. Calcium, magnesium, phosphorous and citrate are distributed between the soluble and colloidal phases (Table 3). Their equilibria are altered by heating, cooling and by a change in pH.

While the fat droplets generally stick to the sides of the alveoli, some of the watery portion of the milk drips forward and collects in the ductules for the next feeding. Milk from Loretta Jaus' Gibbon, Minn., dairy is as good as gold. Organic gold, that is. Jaus, an organic dairy producer, represented a growing trend at last week's All Things Organic, North America's largest all-organic trade show at Chicago's McCormick Place. Demand has outstripped the supply of certified organic milk and beef, in particular, Hamilton noted. Organic Valley Family of Farms, a cooperative based in LaFarge, Wis., struggled to meet demand for organic milk after demand jumped 20 to 24 percent in late 2003 and continued growing, said Theresa Marquez, an Organic Valley representative.
