Lazio: Roma
built 605 days ago
Salvia Bianca, Santa Rosa Wine Importers Cesanese (chae-sah-NAE-sae), reputed to be a favorite of the Roman Caesars, is the only red grape indigenous to Lazio. This rare wine is making a comeback. From the hills of Piglio (PEE-l'yoh) southeast of Rome, the best wines are bold and spicy with ample tannic structure. "Colle Forma" is aged only in stainless steel. Orange-red in the glass, there's a scent of red berry and herbs on the nose, brandy-soaked cherries, and plum skins. Ideal with light sauces, red meat, roasted meat, and strong cheeses.
The Etruscans ruled Lazio for almost a millennium, and important Etruscan sites are found in the region. The most significant is probably Tarquina, on the southern coast, where necropoli remain. Other key ancient sites in Lazio are Ostia Antica and Tivoli. The villa which once belonged to the Roman Emperor Hadrian is still standing at the latter.
Rieti is the capital of Lazio's largest province and lies on the old Roman Salt Road (via Salaria). Rieti is sparsely populated these days, and the countryside around offers marvellous cuisine, with local truffles and excellent goat's cheese from the surrounding Sabine Hills.

Some of Italy’s best-known pasta dishes originated in Lazio. Bucatini all’Amatriciana, with its sauce of pancetta, tomatoes, and chili pepper, was born in Amatrice, a little village on the border between Lazio and Abruzzo, but the Romans have claimed it for their own.  Romans, whose passion for pasta is legendary... take credit for inventing  Spaghetti alla Puttanesca (streetwalker’s spaghetti, so named for the local prostitutes who were said to enjoy its nourishing qualities), which includes garlic, tomatoes, capers, olives, herbs, and anchovies; and S paghetti alla Carbonara, made with bacon, eggs, butter, and cheese.
