Iodine deficiencies can cause thyroid problems and, in newborns, mental retardation. Usually, we get iodine from sea food or from vegetables. However, vegetables grown in some areas do not get enough iodine from the soil and many people eat very little seafood. I discourage the use of salt on the table or in cooking. However, anyone following my advice and taking a daily multivitamin with minerals will get plenty of iodine since the standard dose is 150 mcg in every multivitamin with minerals that I have seen.

Iodine compounds are found in seawater, soil, and rocks. Iodine is obtained as sodium iodate, an impurity in the sodium nitrate beds in the South American country of Chile (the world's largest source of commercial iodine). Other important sources of iodine are underground pockets of brine (saltwater) found in Michigan, California, and Louisiana.

Iodine in air can combine with water particles and precipitate into water or soils. Iodine in soils will combine with organic matter and remain in the same place for a long time. Plants that grow on these soils may absorb iodine. Cattle and other animals will absorb iodine when they eat these plants.
