Garlic mustard is a biennial herb that grows to about 3 feet tall. The small, white 4-petaled flowers appear in early spring and seed production soon follows. Seedlings develop into basal rosettes by mid summer. The plants overwinter as a basal rosette with kidney-shaped leaves. When the plants bolt in early spring, the mature leaves are triangular, becoming smaller toward the top of the plant. In early spring the roots and new leaves smell like garlic.

Garlic, a perennial of the Liliaceae family which is harvested as an annual, has an uncertain origin but is probably native to Asia. It likes a rich, well drained, slightly moist and deeply dug soil on the acidic side. It will... tolerate a pH as high as 8.3 and grows from Zones 4 to 9. In full sun the herb produces the best crop which is a compound bulb (head) containing about a dozen bulblets, more commonly called cloves, which are covered by a whitish or purplish papery sheath. The large gray green leaves coming from the base look like other members of the onion family and the small whitish generally sterile flowers which appear in spring and summer form an attractive ball which can be dried for decorative purposes. Bulbils which sometimes form on uncut flower stalks will, however, produce new plants.
