Garlic has many health benefits, including anticoagulant properties similar to (if not better than) Aspirin. It can reduce LDL cholesterol, has anti-carcinogenic properties, and relieves hypertension. For health benefits garlic can be eaten raw, in the form of 1-2 cloves a day sliced into pill-sized amounts and swallowed. Powdered garlic is ok, but nothing beats the real thing. It is delicious cooked with just about anything, and steams well with vegetables, leaving mild cloves and spicy veggies.

Garlic has a wonderful history which goes back to 3000 B.C. when it was depicted in Egyptian tombs as an offering to the gods. When the pyramids were being built the slaves were given a daily ration of garlic until the thrifty pharaoh took it away; the slaves went on strike until they received their garlic. Garlic was found in King Tut's tomb. Egyptians took solemn oaths on the cloves and Roman soldiers ate it before battle for strength because it was the herb of France. The story is that 4 convicted thieves were given the task of burying bodies during the plague which surely would mean they would contract the disease. They drank and sprayed themselves with a wine vinegar and garlic mixture while doing their miserable chore and did not catch the disease.

Garlic grows in large papery heads. A novice mistake is to massively overgarlic things by following instructions incorrectly. Please remember that the large bulb of garlic you buy is NOT one 'clove'. The whole garlic is called a 'head' or 'knob'. Each small, individual segment of a garlic head is a clove.
