Fleshy, edible fruits serve as food for animals. Animals in turn spread the enclosed seeds of the fruits they eat and so disperse what will be the next generation of that plant. The coconut provides a good example of a fruit adapted for dispersal by water. Its corky, buoyant outer layer allows this fruit to be carried great distances by ocean currents before the seed within germinates on the seashore. Many dry, dehiscent fruits split explosively, flicking their seeds into the air where they are carried by the wind. Some fruits may have spines for attachment to animal fur, whereas others are winged or feathery for wind dispersal.
Seedlessness is an important feature of some fruits of commerce. Commercial cultivars of bananas and pineapples are examples of seedless fruits. Some cultivars of citrus fruits (especially navel oranges and mandarin oranges), table grapes, grapefruit, and watermelons are valued for their seedlessness. In some species, seedlessness is the result of parthenocarpy, where fruits set without fertilization. Parthenocarpic fruit set may or may not require pollination. Most seedless citrus fruits require a pollination stimulus; bananas and pineapples do not.
The fruits of California holly (Heteromeles arbutifolia) compared with a U.S. penny. They are tiny pomes that resemble miniature apples. Like true apples, the freshly-cut fruit readily becomes oxidized and turns yellowish-brown in the air. The actual mechanism for this blackening process involves the oxidation of phenolic compounds in the tissues by the enzyme tyrosinase. The resulting quinones rapidly polymerize into a brown residue. Placing freshly-cut pieces of apples under water prevents this "unsightly" oxidation.
Freeze dried fruits maintain the original shape, texture, colour and most importantly the flavour of the fresh fruit. Freeze drying removes water not flavour which ... preserves vitamins and nutritional content. Another advantage of freeze dried fruits is that they are available all year round and have an extensive shelf life at room temperature. Air dried fruits will not maintain flavour to the same degree as freeze dried.
