Unfortunately for Moon and Russ Thompson, Flowers Foods' technical services manager, reduced-carbohydrate bread formulations were not readily available. As a result, the company worked with ingredient suppliers on a reduced-carbohydrate formulation for more than a year, trying to understand the intricacies of the concept and ingredients used in a reduced-carbohydrate formulation. It tested formulas in the lab and then used some of its bakeries to run various formulas in a reallife production environment.

THOMASVILLE, GA -- Flowers Foods (Thomasville, Ga.) announced on Tuesday that its subsidiary in New Orleans, Flowers Baking Company, which has been closed since late August following Hurricane Katrina, has reopened its doors for business. The bakery is producing white bread under the Bunny brand for the New Orleans area and the Gulf Coast region, notes a press release.

Prepared Foods New York/August 27, 2007/MarketWatch -- Flowers Foods Inc. said it named R. Steve Kinsey to the post of chief financial officer, replacing Jimmy M. Woodward, who will retire effective September 15, citing family reasons. Woodward will remain in an advisory capacity to the Thomasville, Ga., baked-goods producer. Kinsey has served as the company's vice president and corporate controller.
