Eggs: Water
built 289 days ago
Shop the Britannica Store! All fish hatch from eggs. Usually the females and males release the eggs and the milt (fish sperm) into the water. When they meet, the eggs are fertilized. Eggs may be released in long, sticky strings that cling to rocks or seaweed, or they may float on the surface, becoming part of the plankton.

Frying eggs by steam-basting cuts the amount of fat needed. Coat the pan lightly with oil or butter, heat it over a medium heat, and crack the egg into the pan. Reduce the heat to low and cook for 1 minute, then add 1 teaspoon (5mL) of water, cover the pan tightly, and cook for at least 6 more minutes.

Dishes and utensils used when preparing eggs should be washed in warm water separately from other kitchenware, and hand-washing with warm, soapy water is essential after handling eggs. Any surfaces that might have potentially come into contact with raw egg should be washed and can be sanitized with a solution of 1 teaspoon chlorine to 1 quart water.

Most eggs used in baking are at room temperature. A quick way to warm eggs to room temperature is to place them in warm water for 10 - 15 minutes, or else leave them out for 30-60 minutes.

For baking, frozen eggs can be made quite as good as fresh ones if used as soon as thawed soft. Drop them into boiling water, letting them remain until the water is cold. They will be soft all through and beat up equal to those that have not been touched with the frost.
