A Detroit-area native, Adam Hightower , 30, has been named fine dining chef and will oversee MotorCity's AAA Four Diamond restaurant, Iridescence, in its new location on the 17th story of the MotorCity Casino Hotel tower. Specializing in regional American fare, Hightower has reinvented the Iridescence menu using local and organic ingredients to craft area-inspired dishes. The restaurant will open for dinner January 26 .
