Carbohydrate: Foods

Sucrose, interestingly, even though it needs to be broken down, tends to raise the blood sugar more rapidly than almost any other simple carbohydrate. Ultimately, all energy in the body is obtained by burning various foods, which must be converted into materials that feed into something called the Kreb cycle. The Kreb cycle essentially produces energy. Digestion of the more complex carbohydrates begins in the mouth with salivary amylase, and then in the small intestine. The pancreas releases sucrases, amylases, lactates, and maltases, which need an alkaline environment to break carbohydrates down into monosaccharides. All carbohydrates, ultimately, are then converted into glucose.
Simple carbohydrates are ... called simple sugars like the table sugar which is almost 100% simple carbohydrate. In some foods like fruits and milk, simple carbohydrates are present. Simple carbohydrates present in fruits and vegetables are better than sugars as the former also contain vitamins, fiber, other nutrients (like calcium in milk). Complex carbohydrates are also called starches, and their main sources include grain products like breads crackers, pasta, and rice. Processing of complex carbohydrates reduces their nutritional value. Generally, complex carbohydrates are preferable to simple carbohydrates.
If your score* indicates that you are a carbohydrate addict (mild, moderate, or severe), you are not alone. Carbohydrate addiction affects millions of people (up to 75% of the overweight and many others as well). Often it goes undiagnosed and, of course, uncorrected. Most carbohydrate addicts have a strong or recurring desire for breads and other starches, for junk food and snack foods, or for sweets. Carbohydrate addicts have a tendency to put weight on easily and, when they are able to lose weight, they usually regain the weight over time. Most carbohydrate addict do not know that they have a physical disorder, an excess of insulin, and wrongly blame themselves for their lack of control and their weight struggles.
[One] factor which affects the risk of developing caries is the retentiveness (stickiness) of the carbohydrate. Foods such as dried fruit or toffees may stick to the teeth and so reduce the pH in the mouth for a longer time than would occur than less sticky food. It is important that teeth are brushed regularly each day, preferably with a fluoride toothpaste, to remove any food sticking to the teeth or trapped between the teeth. Regular tooth brushing and the use of dental floss ... removes the dental plaque coating the tooth surface and gum margins, which constrains the bacteria responsible for dental decay. Regular visits to the dentist are important to ensure that dental health is maintained.

The exchange system is composed of lists that describe carbohydrate, fat, and protein content, as well as caloric content, for designated portions of specific foods. This system takes into account the presence of more than one type of nutrient in any given food. Exchange lists are especially useful for individuals who require careful diet planning, such as those who monitor intake of calories or certain nutrients. It is particularly useful for diabetics, for whom carbohydrate intake must be carefully controlled, and was originally developed for planning diabetic diets.
