Acadiana

The belly-warming Southern Louisiana-style cooking at Acadiana is one of Washington's most delightful new additions. The menu reflects the bounty of the Big Easy with the finest of seafood and premium meats. The restaurant is "a contemporary interpretation of a Louisiana Fish House," Chef Jeff Tunks says. The roux, rémoulades, bisques and étouffées are to die for and Acadiana's contemporary décor is divine. Appetizer favorites include fried green tomatoes, Mid-Atlantic oysters in on the half shell, a trio of succulent deviled eggs, and pan seared Hudson Valley foie gras. Colorful entrees, like Aunt Boo's fish camp crawfish etouffee and "grillades and grits" (sautéed veal medallions with creamy jalapeño cheese grits), will tempt your tastebuds.

As predicted by Metrocurean and I'm sure hoped for by many, Acadiana is having a benefit for the victims of the Hurricane. And not just any benefit -- this looks fricking' awesome. What they are doing is a huge statement about the giving and collegial nature of the DC Chef community. Thank you Chef Tunks et al.

The competition was conducted during the Fêtes de Wallonie. The city of Namur created an atmosphere of friendship and hospitality that is still talked about today.
